Flametree Cabernet Sauvignon is based around a core of fruit from Wilyabrup, grown on varying degrees of north facing aspects in gravelly loam soils.
The fruit spends several days soaking on skins. It then begins wild yeast fermentation in open top vessels, receiving strategic plunging and pump overs to extract balanced tannins.
After pressing, the wine is transferred to new and seasoned French oak barrels for 14 months of maturation. In some vintages, the final blend contains a small amount of Malbec.
Bright garnet, Flametree Cabernet Sauvignon has dark fruit flavours supported by fine tannins. Cellaring potential is 10 years.
